Ingredients & Directions:
*bake one Joseph’s Flax, Oat Bran & Whole Wheat Pita in oven until crispy (bake at 375 for about 10 minutes) – I turn over a few times
While Pita is crisping I sauté :
*1/2 cup of chopped mushrooms
*1/2 cup of chopped green peppers
*1/2 cup diced no salt added diced tomatoes
*add spices you like – I use garlic and pepper
When veggies are cooked I add:
*3 egg whites – beat until fluffy pour over veggies and cook
Remove pita and top with veggies and egg whites.
I thinly slice one piece of Cabot 50% reduced fat sharp cheddar cheese and place over pita.
Put back in oven until cheese melts.
